Soupy Noodles

This is an arXiv article on food that I like and is easy to prepare. I am the kind of person who likes tasty food but cooking is not her forte. Often times I waste a lot of energy and time deciding what to eat, especially for breakfast. Sometimes a predecided menu and a recipe help me to be quick. That's why I decided to jot down in this blog, all the recipes I like. So that whenever I am unable to decide what to eat, I can have a look at it. Today I am up with the vegetable noodles. This dish is perfect for breakfast but can also do super during lunch or dinner. 

 Ingredients: Vegetables of choice (I took beans, carrots, mushrooms, onions, spinach), Instant noodles
Time: For 1 pack of noodles, 25 minutes 

 Steps: 
1. Fry the chopped onion first in low to medium heat for 1 min 
2. Then add the carrots, and beans, and saute for 2 mins 
3. Add the mushroom, saute for additional 2 minutes, and add a pinch of salt
4. Once the vegetables are a little reddish, add salt to your taste, and cover it. Mushrooms will lose water. 
5. Meanwhile take another pot, pour boiled water, and add the noodles to that. Put the pot on very low heat. 
6. Let's take a look at the vegetables now, they are almost done, add the spinach now, stir all of them, and cover for 2 more minutes.
7. Add some water to the vegetables, I used the extra water from the noodle. Cover the vegetables, increase the heat, and boil for a few minutes 
8. Once all the vegetables are boiled, add the noodles to it, and mix well with the vegetables. Cover the pan, and keep on low to medium heat for 2 more mins. 
9. Turn off the heat, pour the mixed veg noodles into a bowl, and sprinkle peppers, and chopped coriander leaves.
TADA... you are done. Your breakfast is ready!
